Ingredients:

1 lb. boneless, skinless chicken breasts, cut into cubes

1 onion, chopped

3 garlic cloves, minced

1 red bell pepper, chopped

4 cups chicken broth

1 can (14.5 oz) diced tomatoes, undrained

1 tsp. dried oregano leaves urded black pepper to taste)

Instructions:

  1. In a large saucepan over medium heat, cook the chicken, onion, garlic, and bell pepper in chicken broth until the chicken is cooked through. 2. Add the diced tomatoes and their juice, oregano leaves, and black pepper. Bring to a boil. 3. Reduce the heat to low and simmer for about 10 minutes to allow the flavors to blend together. 4. Serve hot in individual bowls. Enjoy!

Instructions: Heat olive oil in a large soup pot over medium heat. Add onion, garlic, chicken broth, lentils, carrot, celery, cumin and smoked paprika. Season with salt and pepper, to taste. Bring to a boil; reduce heat to low and simmer until lentils are cooked through, about 15 minutes. Stir in chickpeas, tomatoes with their juices, green chiles and lime juice.
