Now that fall is finally here, break out the light soup recipes!

This recipe for French onion soup with leek is the perfect light and easy Fall meal. All you need is a few simple ingredients and a few hours to let the soup simmer on your stovetop.

Ingredients:

-1 large yellow onion, thinly sliced -2 tablespoons olive oil -2 cups vegetable broth -1 cup water -1/2 teaspoon dried thyme -1/4 teaspoon black pepper -3 large leeks, washed and thinly sliced -3/4 cup grated Gruyère cheese -1/4 cup chopped fresh parsley leaves -1 baguette, cut into 1-inch pieces -unsalted butter, for brushing on the baguette cubes

Instructions: In a large pot or Dutch oven over medium heat, warm the oil until shimmering. Add the onions and cook until softened and lightly browned, about 10 minutes. Add the broth, water, thyme, and pepper and bring to a boil. Reduce the heat to low and simmer for 30 minutes. Meanwhile, in a separate pan over medium heat, sauté the leeks in butter until softened, about 5 minutes. (If you are feeding leeks to children who may be sensitive to sand or dirt left in them from their washing process, sauté them in a tablespoon of oil instead).

Add the sautéed leeks to the soup pot and simmer for 15 more minutes. Preheat the oven to 350°F (175°C). Grease a 2-quart baking dish with butter.

Thread the baguette cubes onto skewers (if using wooden skewers, soak them in water for 30 minutes prior to use) and brush them with melted butter. Bake in the oven for 15 minutes until golden brown. Garnish each bowl of soup with some of the cheesy bread cubes and some chopped fresh parsley leaves before serving.
