1 tablespoon olive oil 1 onion, chopped 3 cloves garlic, minced 1 carrot, chopped 1 stalk celery, chopped 2 cups vegetable broth 1 can diced tomatoes 1 teaspoon dried oregano ½ teaspoon salt Freshly ground black pepper to taste 1 cup frozen corn 1 cup cooked kidney beans 1 cup cooked white rice To make the soup: Heat the oil in a large pot over medium heat. Add the onion, garlic, carrot, and celery. Cook until tender, about 5 minutes. Add the broth, tomatoes, oregano, salt, pepper, corn, kidney beans, and rice. Bring to a boil over high heat. Reduce the heat to low and cook until heated through, about 10 minutes. Serve hot. This recipe makes 4 servings.

Add the bell pepper; cook 3 more minutes then add all of ingredients up to but not including the black beans & cilantro- bring to boil then simmer covered on med-lo heat 10 minutes … uncover & simmer additional 10 minutes stirring occasionally….. Now add in rinsed well drained black beans & cilantro leaves- simmer another 5 covered then serve…..makes approx 6 servings
